Domaine Coston is located not far from Saint Guilhem‘s Abbey. It is a vineyard deeply rooted in tradition. In the heart of the terroirs of Aniane and Puéchabon, their 12 hectares of vines are nested on chalky-clayey hillsides. The land is perfumed with guarrigue fragrance (thyme, rosemary, savory...) and benefits from an exceptional climate.
Inspired by the family passion for wine making Domaine Coston reopened their grandfather's cellar again in 2000 before producing their first modern cuvée two years later with the appellation «Coteaux du Languedoc».
They have chosen to work with ancient selected grape varieties, typical of the local history and well-adapted to the terroirs.( 50 years old Carignans, Grenaches, Syrahs, about 20-30 years old Cinsaults ) . These selected vines (with low yields) need specific care to produce a high quality product.
They use their traditional knowledge to give expression to other
varieties (Cabernet franc, Petit verdot, Mourvèdre, Roussane,
Grenache Blanc) in order to grow the terroir and make very
personal wines. From the pruning to the vinification they try
to extract the best from their vines. Specific care is given to
each vine to get the ripest and cleanest grapes.
Each vine is vinified separately. The vinification process is
chosen according to the quality of the grapes, their varieties
and the wine makers personal tastes. Whatever the aging is
(tanks or oak barrels) the wine is aged on its lees.
They aim to get the best out of their grapes so that they ca
n offer fine and concentrated wines with a rich aromatic
structure ending with notes of guarrigue.
